RECIPE CORNER
Cookies, Cookies, Cookies mmmm
This recipe makes lots and lots, but you could always half it if you REALLY have to
2 (500 ml) cups butter
24 oz. (680 g) chocolate chips
4 (1000 ml) cups flour
2 (500 ml) cups brown sugar
2 tsp. (10 ml) (Bicarb) soda
1 tsp. (5 ml) salt
2 (500 ml) cups sugar
18 oz (500 g) Hershey Bar (grated). (Cadbury chocolate for Australians & South Africans)
5 (1250 ml) cups blended oatmeal
4 eggs
2 tsp. (10 ml) baking powder
2 tsp. (10 ml) vanilla
3 cups (375 ml) chopped nuts ( optional )
Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, Salt, baking powder, and Bicarb (soda). Add chocolate chips, Hershey Bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet. Bake for 10 minutes at (180 *C ) 375 degrees.
(The above quantities make approx 112 cookies )

BAKED SEA BASS:
Baked Sea Bass
One large sea bass or two smaller ones enough for two people.
Rosemary sprigs and/ or Oregano (or any herbs to hand)
Couple of garlic gloves thinly sliced, more if you like garlic
Lemon slices from one whole lemon and the Juice
Small bunch of Basel, Olive Oil and sea salt.
Foil
Preheat oven to 200C / gas 6
stuff the cavity with lemon slices and some of the rosemary and/ or some oregano (seeing as you are in Portugal Oregano is easy to get)
lay the fish on an oiled, foil covered baking tray
make about 6 slashes down its side
then poke the rosemary and garlic slices into the slashes sprinkle with roughly chopped basil leaves over the slashes
drizzle with olive oil and sprinkle with a good measure of sea salt and lemon juice, cover with foil and bake for a good 15-20 mins or until cooked. When it cooked you can take off the foil and the skin should come off with the foil. Really Good for BBQs too.

Marscarpone & Lime Torte.
200g biscuits (ginger, digestive or other favourite), crushed
50g (2oz) butter, melted
2 x 250g tubs of marscarpone cheese
40g (1.5oz) icing sugar, sifted
Finely grated zest & juice of 2 limes (or use an orange or a lemon)
To decorate - chocolate leaves, around caster sugar dusted green grapes
1. Mix biscuits and butter. Press into 7" loose bottomed cake tin.
2. Mix icing sugar and lime zest & juice. Stir into marscapone. Spread over biscuit base. Chill for 30 minutes.
3. Decorate
Alternatives:- add 1-2 tablespoons of fruit liqueur (although I suspect it would be very runny if you did this).
Substitute grated chocolate for lime and sugar.
