has anyone got a quick and fool proof receipe for lemon curd

I've never made lemon curd but I do know it doesn't keep for very long because it has eggs in it. So unless you eat loads of it it's not worth making lots to keep :cry:

Founf this recipe on the beeb website
Lemon Curd,
4 lemons
4 eggs
4oz butter
4oz sugar.
METHOD
Grate rind and squeeze juice from lemons
Place sugar, rind, juice, butter and beaten eggs into a large basin on top of a pan of simmering water.
Stir with a wooden spoon until the mixture is thick and coats the back of the spoon.
Pour into warm sterile jars, cover seal label cool then refirigerate.

Mmmm, Im with you on this one Von and Lizzie, especially homemade stuff :P
I remember buying some in market in Yorkshire Dales..and they had 'Orange curd 'too! Moreish!
When we had the workshops in Algarve, they were situated in lemon & orange groves. So I always had plentiful supply of the fresh fruit. Mostly I made Lemon meringue pie..and sometimes 'lemon & orange' mixed meringue pie..
but I dont remember ever making lemon curd..only marmalades..
youve both got my taste buds working now! :)

will have to try the lemon & orange merengue (probably spelt that wrong) it sound really zesty and sharp with a lovely sweet topping Mmmm Mmmm

will you stop it Von..Im trying to go on a diet here! (not very successfully :roll: )

It is nice thought, isn't it..the thought of growing your own lemons, oranges etc.. really fresh juice for breakfast too..

Mind you, I made a big mistake once. We'd come home via the back roads to Lagoa..and stopped at a tiny village. I was walking along when I saw, what I thought was apples hanging from a tree over wall. I reached up, picked one, took a bite. UGH !!!....turned out to be a Quince. I think the locals make 'marmalade' from these?

I shall have to watch out for those. Iam also trying to loose weight eldest daughter has signed me up for a Body Balance Class on thurs night so I expect I shall be all aches and pains on fri morning I am hoping that this does not include jumping all over the place like a demented young 50 year old. Iam sure her and her two friends think I am probably past it but I have a few surprises in store for them I hope.

We had a quince in our garden in the UK it was very beautiful, lovely red blossom & loads of fruit which I never got round to using. My grandmother used to make quince jelly which was delicious & we often ate it with cheese.
I love lemon curd I wonder if you can make lime curd, another favourite of mine is the Rose's lime marmalade. :D

Hi Blue you can make curd from most citrus fruits, but lemon, lime, tamgerine or orange are best. God Luck. Liz

Tangerine sounds good Lizzie..I might have a go! :)
I have a Chaenomeles japonica /flowering Quince in hedge of front garden. Its only about 4 x 4 ft bush....but it always has masses of red flowers and then the fruit, which is small and hard. Ive never picked any or tried to use for cooking. But seeing blue's post , I might just have a go!
Got any recipes for quince jelly girls please?
p.s. Ive made 'crab apple ' jelly which is quite nice.

I've still got my grandmothers original 'Mrs Beaton' it's been all over Africa with her & is very battered & bruised but still completely legible, unfortunately it, along with most of my other books, is in a packing case at home. It shows you how to make absolutely everything from furniture polish to baked Alaska. Gran used to make all her own preserves (no freezer in those days) & I can still see all the kilner jars with every type of friut & vegetable in, mostly grown by my grandfather in their garden, so they had yummy things to eat all through the winter. All fresh food was seasonal then, now you can buy anything any time of year, kinda' miss looking forward to different foods at different seasons of the year.

Anyway the long & the short of all this rambling on is I do have the recipe but it's back in the UK which is no used to anyone & crab apple jelly is delicious. :D
