smoked salmon in carvoeiro
Hey, Im not that old!! You got grey clouds too?? Just spoke to John sunny and 28 at mo!! 16 days to go and counting! Then I understand we have a lunch at BPCC/Resident on 3rd July - that we are providing Smoked Food for - take it I'm playing carrier again?
Think we need to source a good bagel as Ive never seen them in supermarkets there?

Always found bagels to be the wrong texture for the subtleties of smoked salmon, but that's maybe just me.
Any body got a really good and innovative recipe using smoked salmon? I will put up a side of our delicious smoked salmon for the best recipe posted here by the 22nd June... get innovating!!!

Smoked Salmon Artichoke Dip Recipe
6oz. Smoked Salmon chopped (more if you wish to make it even more fishy)
1 can of artichokes hearts chopped
1/4 cup of mayo
2 cloves of garlic chopped
1/4 cup of Parmesan cheese
Mix all together, serve with crackers or this can be spread on toast. Very quick and easy dip to make, serve by the pool swilling back some cold dry white with friends

Ha! Yeah! Must be you - a million New Yorkers can't be wrong and anyway - Macdonalds smoked salmon with Lochaber smoked cheese with freshly ground black pepper on a lightly toasted bagel with a handful of Rocket on the side - delish!!!

Simon, I agree with you, I prefer a thinly sliced dark rye bread, not pumpernickel that's a bit too sweet. We are lucky here in Canada to have some of the best salmon in the world, be it fresh or smoked.
There is probably a recipe for smoked salmon for every day of the year, but when it comes to a product like you seem to be creating, I think the salmon is best enjoyed as is "au natural": thin layers on a small square of buttered (no cream cheese either!) dark rye with perhaps slivers of red onion and a caper or two, a sprig of fresh dill. Heaven!
For other recipes you can use the more commercial variety of salmon, since it is most often mixed with other ingredients, very delicious nonetheless.
For a Sunday Breakfast I also like:
Buttered toast, topped with a slice of smoked salmon, and scrambled eggs.
I don't know whether these comments count as recipes, but I am a great fan of smoked salmon and will certainly try yours out, when we come to Carvoeiro in January.

Maybe I'm downmarket because I can't see what you see in smoked anything, all you can taste is the smoke, even smoked bacon doesn't do it for me, Palma Ham is another delicacy allegedly, wouldn't touch it with a bargepole, Kippers OK! but you pay the penalty, you can smell them for a week after cooking them.
How much of the partaking of the smoked items is a snob thing eh? unfortunately for me, I was brought up on stew, chips, black pudding and bacon butties, I suppose if the family had been posh, we'd have acquired the taste for these thinly sliced gastronomical delights and I'd possibly have enjoyed the endless suply of canapes at weddings and coctkail parties

easy peasy lemon sqeezy
If you have a bbq with a lid.
Put oak smoked chips or your favourite flavourd chips in the base with the charcoal and set as normal.
Prepare duck as you like, I stuff mine loosely with chopped apples, mixed fresh herbs and chopped onions. Rub the bird titholiveoil, rub in salt and pepper. Place on trivet and cover with the lid and bake for approx 24 hours slowly. Its not rare but it does taste nice, or you could do a cold smoke in the bbq, which will do it rare. Its years since I did it this way and have lost my American broiler information laflet that tells you how to do it. Good luck

I love smoked salmon but can't abide other smoked products, especially ham, bacon and cheese!!
I lightly toast bagels cover them in cream cheese and layer smoked salmon on top with ground black pepper and a touch of lemon juice..... yummy and now I am starving!
Of course you could just have it with blinis....

I don't liked smoked goods at all really.
Hub used to fetch home fresh bagels from a Jewish baker friend in London's East End, during his Fire days and I did enjoy smoked salmon as you've described Sharen..also had smoked salmon rolls at Colombos..
but also like you, I can't stand smoked cheese, bacon, ham etc
Too much smoked food isn't good for your stomach.
