Favas

Post by digger »

Broad beans (favas) are plentiful this time of year. They are young, succulent and truly delicious. They can be easily found - at a good price - in markets throughout Portugal. Try this simple supper dish (based on a tradition recipe):
Pod your beans/sweat onion garlic and chopped streaky bacon in a liberal amount of olive oil/then add a splash of water and the beans, pinch of salt & lots of fresh coriander leaves/simmer/serve with a little boiled rice (optional).

Uuuuuum

:D thanks digger, that's a nice and easy recipe to try out, even here in Canada.

sounds delicious..I dont recall ever having tried this dish. But on hol a week or so ago..I was invited to a Portuguese lady's house in Lagoa. The mother of some new friends Id met that week and as I sat drinking the Port she offered me ,along with homemade cake..this lady..in her 80s..sat shelling the beans...and with her son as interpretor..she told me of how she would prepare them.
Ill definitely have a go at this one Digger :) cheers!

The real thing is something more substantial: along with the bacon, it includes pieces of pork from different cuts (red meat is best) and slices of black chourico
