Guacamole - Californian version a bit Tex Mex.
Ingredients:
3 x Large Avocado’s
1 x Lime
1 x Pot of fresh Salsa ( Sainsbury’s or Tesco )
Half a red onion chopped small
A good bunch of Coriander chopped finely
Last of all Cumin
It will depend how you like it as to how you make it, sometimes I make it a little chunky if we are having it as chips and dips, and smooth if it is with kebabs or burgers.
Take the Avocado’s scrape out the insides and mash with a fork ( but keep the stones so that if you are making it sometime before you want to eat it, you can put them in to the final mix and it will keep its colour )
Add the Salsa and squeeze the lime over the top and mix together – at this point you can blend it to give smooth mixture if you wish
Add the chopped onion and Coriander and mix in well at the same time add the Cumin to taste.

Hi Guys, I haven't been around for a while - don't know what I've been doing to be honest! Hoping to get out to cvo in Oct. Here's my recipe for Guacamole - bit simpler than the previous - but hopefully as tasty!
1 Avocado, nice and ripe - it's a good way to use up over soft ones!
1 clove of garlic minced
Mash the two together
Add a good few drops of piri-piri (as hot as you like)
Add a squeeze of lemon and a dash of olive oil, salt to taste
Serve with lashings of hot toast.

8 fresh figs
4 tablspoons clear honey

Preheat the grill to high. Arrange the figs cut side up on the grill pan. Brush with half the honey and scatter over the rosemary if using.
Cook under the preheated gr for 5-6 minutes, or untill jist beginning to caramalize
Meanwhile, to make the sabyon, in a large heatproof bowl, lightly whisk the eggs with the remaining honey, then place over a saucpan of simmering water, using a hand-held electric whisk beat the eggs and honey together for 10 minutes, or untill pale and thick.
put four fig halves on a serving plate add a generous spoonful of the sabayon and serve immediately, easy peasy!
