#1 Take a bottle of the fizzy stuff to a good vantage point on the cliffs and watch the sun go down.

top tip indeed! i remember we found a nice viewing spot on the cliffs up at the right side near the main Carvoeiro beach. also watched the seagulls fly by at eye height.

#2 well dont know if this is actually possible in CVO but rent a (speed)boat and spend a day on the water. did it once on corfu great fun! espacially if you can find some secluded beach.

#3 Hire a mountain bike and cruise the oldest narrowest dustiest roads. You will find the "old Algarve" sitting right beside the new one...

I vote for Falcon's idea.

or.............drive up to Foia on a really clear night and lie down and look at the stars. There's no light pollution up there, and you can see all sorts with naked eye. Better still take a telescope or bino's and see the aliens watching us. Oh dont forget the wacky if you want to see the aliens.
